These dainty and, dare I say, scrumptious cucumber roll ups are the perfect bite sized appetizer! The recipe uses left over dip, which we all have laying around every once and a while! It takes about 30 seconds to make each one, making them a quick and healthy snack! Whether you call them cucumber rolls, cucumber wraps or cucumber wrap rolls, these tiny veggie bites are SURE to be a hit in your household!
I personally love this recipe because it gives you the freedom to use whatever dip you want! Not all of us want to make dip from scratch, so having the option to use a healthy store bought dip of our own choosing takes some of the stress away!
And since this is an appetizer recipe that can be served to guests, less stress is best!
You can also get a couple servings of vegetables in when enjoying these cucumber rolls, and we’re all in need of upping our veggie intake!
How To Make Cucumber Roll Ups
They are SO easy to make. Just grab your favorite dip, some julienned veggies and a mandoline, and you’re ready to make these cucumber roll ups!
- You want to julienne the vegetables that you are going to use inside of the wrap. Cut them into about 1/5 inch long, thin strips.
- Next, using a mandoline, carefully begin to strip thin layers off of the cucumber. You want to position the cucumber length wise to get the longest strips possible. Make sure you are putting consistent pressure on the cucumber the whole time. Do this until you have about 20-30 strips.
- Lay one strip of cucumber on a clean surface. Spread your dip of choice along the length of the cucumber strip. Place a few veggie sticks at one end of the cucumber and top them with shredded basil.
- Using your hands, carefully roll the cucumber wrap until it is fully wrapped up. Pick it up and place it on a serving dish. Continue with the rest of the cucumber slices until you are done!

When To Serve Cucumber Roll Ups:
These fresh and crunchy cucumber bites make a wonderful finger food appetizer! I recommend using a thicker dip spread or cheese spread such as Boursin cheese if using them as appetizers so the dip doesn’t fall out.
