In my own version of this pasta with Boursin cheese recipe I omit the heavy cream and add extra veggies to make it a little healthier. It’s quick, easy, and seriously tasty!

Is This Recipe Mediterranean Diet Friendly?
It sure is! Pasta can definitely be enjoyed while following the Mediterranean diet, as long as it is in moderation. I wrote this recipe to only use two cups of uncooked pasta for 4 people, so you will be more likely to fill up on veggies before you fill up on pasta. I also add a lot of fresh herbs to this recipe to make it more Mediterranean!
You want produce to be close to half of your plate at each meal, and this recipe accomplishes that. Cheese is also allowed on the Mediterranean diet, though typically in moderation—just a few ounces per week. This recipe, however, includes a substantial amount of cheese all at once. It’s fine to enjoy this pasta with Boursin cheese recipe occasionally, as long as you’re mindful of your overall cheese intake for the week.
How To Make Boursin Cheese Pasta
As I mentioned earlier, it really doesn’t get much easier than this! Feel free to use whatever kind of pasta that you want, and make sure to scroll down to the recipe card for the full list of ingredients and instructions.
Preheat the oven to 400 degrees F. Start by bringing a large stockpot filled with salted water to a boil. Cook your pasta according to package instructions. Prior to straining, reserve about 1 cup of pasta water.
Add the two Boursin cheeses to a 9″ by 13″ baking dish and surround them with the cherry tomatoes, broccoli florets, and chopped onion. Toss in your minced garlic, salt, and pepper.
Drizzle the vegetables with olive oil, then transfer the baking dish to the oven and bake for 35 minutes until the vegetables are cooked through and the cheese is extra soft.
When done, add about 1 tbsp of reserved pasta water to the baking dish and mix everything up. Add more pasta water as you feel is needed (I do not add any more). Toss in the cooked pasta, and top with chopped fresh parsley and basil.
How To Store Leftovers
If you have any leftovers, store them in an airtight container in the refrigerator for up to 3 days. To reheat, microwave for 60 seconds, stir, and microwave in 30-second intervals until heated through. You may need to add a splash of water or broth to bring it back to life.

Ingredients
- 2 cups uncooked pasta I used penne
- 1 cup pasta water only using about 1 tbsp
- 2 5.2 oz Garlic and Herb Boursin Cheese Wheels
- 1 1/2 cups cherry tomatoes
- 2 cups small broccoli florets make sure they are small so they cook properly
- 1 medium vidalia onion any kind of onion works
- 2 garlic cloves, peeled and minced or pressed through a garlic presser
- 1/4 tsp table salt
- fresh cracked black pepper
- 1/4 cup extra virgin olive oil
- 10 basil leaves, chopped well
- 1/4 cup curly parsley, chopped well
