This Boursin cheese pasta recipe is incredibly easy—just arrange the cheese and veggies in a baking dish, bake, toss with pasta, and dinner is served! Feel free to use whatever kind of pasta you want, and add a protein if you're feeling it!
2cupssmall broccoli floretsmake sure they are small so they cook properly
1mediumvidalia onionany kind of onion works
2garlic cloves, peeled and minced or pressed through a garlic presser
1/4tsptable salt
fresh cracked black pepper
1/4cupextra virgin olive oil
10basil leaves, chopped well
1/4cupcurly parsley, chopped well
Instructions
Preheat the oven to 400 degrees F. Start by bringing a large stockpot filled with salted water to a boil. Cook your pasta according to package instructions. Prior to straining, reserve about 1 cup of pasta water. Strain pasta when done.
Add the two Boursin cheeses to a 9" by 13" baking dish and surround them with the cherry tomatoes, broccoli florets, and chopped onion. Toss in your minced garlic, salt, and pepper.
Drizzle the vegetables with olive oil, then transfer the baking dish to the oven and bake for 35 minutes until the vegetables are cooked through and the cheese is extra soft.
When done, add about 1 tbsp of reserved pasta water to the baking dish and mix everything up. Add more pasta water if you feel like it is needed (I do not add any more). Toss in the cooked pasta, and top with chopped fresh parsley and basil. Enjoy!
