But I promise you, this spaghetti recipe is so stinkin’ easy, I actually had to take a deep look at myself to figure out why I don’t make pasta from scratch more often!

Why Should You Make Homemade Pasta?
I am a big fan of knowing every single ingredient that goes into the food I eat. When you buy pasta from the grocery store, it often contains added ingredients to help preserve the pasta. You also don’t know how it is handled in the factory. Making pasta at home gives you control over exactly WHAT goes into the dough. It also tastes WAY better than the boxed stuff and absorbs sauces better.
As a society, we are so disassociated from where our food comes from, and how it is made. Sometimes it is nice to spend a little time making the stuff that we eat so often from scratch. It gives us a new perspective on eating, and I find this knowledge to be comforting.

How To Make Homemade Pasta Dough From Scratch:
So, this is going to be a KitchenAid pasta press recipe. I know that not everyone has one at home, but this is honestly the only way I know how to make spaghetti, so I’m going to roll with it! If you do not have a kitchen aid pasta attachment, you can follow the instructions for making the dough, then roll it out thin and cut it into fettuccine.
A lot of homemade pasta recipes call for semolina flour. Who just has a bag of semolina flour sitting in the cupboard? I sure don’t! I’m sure it adds a dimension of flavor and texture to the pasta, but to be honest, I, like most of you, don’t have the time to go searching for semolina flour at my local market.
I ALWAYS have a bag of all-purpose flour in my pantry, so that is the flour that I chose to use to make this easy pasta from scratch recipe.
How To Make Spaghetti Pasta Dough:
First, spread the flour out on a clean surface. Make a well in the middle (so it looks like the mouth of a volcano), and add the eggs, salt, and olive oil to the well.
With a fork or small whisk, begin to break up the eggs, while slowly starting to add more and more flour from the walls of the well. Continue to add more and more flour until there is no more left to add. Now begin to knead the dough with your hands. It will start out very dry and flakey, but continue to knead the dough for at least 8 minutes and it will slowly start to stick together. Note that it should not be tacky or sticky.
Form the dough into a ball, then cut it into 4-6 equal-sized pieces. You want them small enough to fit into your pasta attachment.

How To Make Homemade Spaghetti Noodles:
Now that your dough is done, it’s time to make the spaghetti noodles!
Attach the spaghetti plate to the pasta presser, and securely attach the pasta presser to the KitchenAid stand mixer. Start the mixer on low, and begin to carefully feed the dough into the hole at the top.
When the spaghetti noodles begin to come out of the pasta presser, allow them to get to the desired length before slicing them off (most pasta attachments have a built-in slicer). Once sliced, hang them on your pasta hanger and continue to feed the dough through the pasta press until you are all done.
Your next steps depend on what your intentions are with the pasta. If you are going to cook it within the next couple of hours, lay the pasta on a plate and cover it with a damp paper towel to prevent it from drying out. When ready to cook, toss them in a pot of salted boiling water and cook until the desired doneness, which for me was 4 minutes. How To Freeze Homemade pasta:
If you are planning on freezing the fresh pasta for a future use, I recommend doubling the recipe, as this recipe feeds 3-4 people one meal.
When you are ready to cook it, treat it exactly like you would regular pasta. Toss it in a pot of salted boiling water and cook until desired doneness. For this recipe, that is about 4 minutes.

- TO COOK THAT DAY: If you are going to cook it within the next couple of hours, lay the pasta on a plate and cover with a damp paper towel to prevent it from drying out. When ready to cook, toss them in a salted pot of boiling water and cook until desired doneness, which for me was 4 minutes.
- TO FREEZE: When your pasta is done being made, lay it on a baking sheet in the shape that you want to freeze it in. Allow it to dry out for 15 minutes, then transfer it to an airtight freezable bag and press out all of the air in the bag. You can store your fresh pasta in the freezer for up to one month!
