What Does This Silken Tofu Dessert Taste Like?
Well, I’ll say this: you will have no idea that there’s tofu in it! When blended, silken tofu turns into the exact same texture of mousse.
Its thick, creamy and pretty much melts in your mouth. The combination of cocoa powder and melted chocolate contribute to its rich dimension, while floral sweet blueberries and honey provide a subtle fresh hint of sweetness.

How Do You Make Chocolate Blueberry Silken Tofu Pudding?
This is the best part, because it is SO easy! Like almost TOO easy…(shifty eyes).
Jumble it all in a blender until smooth, then pop it in the refrigerator to set. Done-zo! Here, let me break it down.

- Gently press your silken tofu with paper towels or clean dish towels until you have drained some of the water out of it. This is important, because excess water will affect the thickness of the mousse.
- Microwave the chocolate chips (or chopped up chocolate bar) in 30 second increments, stirring in between, until fully melted. Be careful not to over microwave, as this will result in burnt chocolate.
- Place into the blender the silken tofu, blueberries and honey and blend until smooth. Now add the chocolate and cocoa powder, and blend again. Don’t skimp on the cocoa powder, trust me! If you don’t use enough, you will taste the tofu.
- Pour the mousse into ramekins, bowls or glasses. Cover with plastic wrap and refrigerate for at least 1 hour to let it set! Top with chocolate spirals, blueberries and/or mint and enjoy!

Is This A Mediterranean Diet Dessert?
Since this is a Mediterranean blog, I like to dive into the specifics of each recipe. If you are not on a Mediterranean diet, you can still enjoy this delicious and healthy dessert! If you are, keep reading.
The Mediterranean diet encourages sweets to only be consumed on occasion. It also recommends against processed foods. So since tofu is highly processed, and there is sugar in this recipe, it is probably not the best Mediterranean diet dessert recipe out there.
BUT, to play devils advocate, when you compare this homemade tofu mousse with a package of cookies or a pint of ice cream, it is definitely a lot healthier! And tofu is high in protein, so that is a bonus!
Plus, you get a good dose of antioxidants from the blueberries. So it is really all in your own perspective.
I personally think this recipe is okay to enjoy when you are on a Mediterranean diet, but I am not a dietitian or doctor, so consult with your’s if you have any questions or concerns about your diet!

I kind of hate using the ‘H’ word, because pretty much everything can be considered ‘unhealthy’ if you look enough into it. Technically this dessert does have added sugar, and tofu does have a lot of estrogen in it. But if you compare this dessert to, say, a package of cookies from the grocery store, or ice cream, I would say that this dessert is a lot healthier.
I would! Tofu holds a LOT of water, and this water will make the consistency of the mousse less thick. It’s super easy to do, just place a couple of folded up paper towels under and over the tofu, and place something a little heavy over the top. You don’t want it to be TOO heavy, as this will completely smush the soft tofu.
If you use vegan chocolate, then yes, it is 100% vegan!!! It is also an eggless dessert, and gluten free!
Absolutely! I bet raspberries would taste AMAZING in this. I actually used frozen blueberries, since that is what I had, and it worked wonderfully. So if you have fresh fruit, you can totally use it, OR this can be a frozen fruit dessert recipe!

- 2 cups frozen or fresh blueberries
- 1 cup vegan chocolate chips (or 5 ounces of chopped chocolate bar)
- 2 tbsp honey
- 5 tbsp cocoa powder
- optional garnish of shredded chocolate spirals, blueberries and/or mint
