This quick and delicious toast recipe is a great way to start your day off on the right foot! Rich, sweet and juicy berries are paired with mild and creamy ricotta cheese, and are then topped with peppery fresh basil. This blueberry strawberry ricotta toast recipe is definitely going to be your new favorite breakfast toast!

What do you like to eat for breakfast? If you’re anything like I was when I worked a 9-5, it looks something like grabbing a fist full of cereal while running out the door, or attempting to eat a hearty bowl of oatmeal in your car during commuter traffic.

Busy mornings usually call for busy, unhealthy foods for breakfast. Luckily, there are recipes like this blueberry strawberry ricotta toast recipe to ground you! It comes together in only a few minutes, and can be enjoyed as you run out the door with your coffee!

What Does This Blueberry Toast Recipe Taste Like?

Ricotta is a very mild and very creamy cheese that is perfect for spreading over bread. It is smooth and thick, with a light flavor that is perfect for pairing with bright and fresh berries! Every bite starts with a creamy intro, followed by a burst of sweet berry juice and a glossy fresh basil finish.

All in all, it is a heavenly breakfast or snack. It feels indulgent, yet, in reality, you are getting a good amount of vitamin C, antioxidants, calcium and fiber (if you choose to serve it on whole wheat bread).

Just like with avocado toast, there are a lot of different variations of ricotta toast that you can try.

Here are some common ricotta toast toppings:

  • Roasted Tomatoes Rosemary Olives

  • Whipped Ricotta Cheese In Food Processor

In this specific recipe, we try to keep it as simple as possible.

Strawberries, blueberries, ricotta, honey and basil are the ricotta toast toppings, while whole wheat bakery fresh bread forms the base.

Some people like to drizzle a little extra virgin olive oil over the top for the added health benefits, and some people even like to drizzle hot honey with red pepper flakes over the top! I’m not a spicy breakfast kind of girl, so I usually sit that one out.

If you want, a pinch of kosher salt on top would tie in the sweet fruit and honey with the savory ricotta cheese very nicely.

What Are The Health Benefits Of This Blueberry Strawberry Toast?

As I briefly highlighted above, this breakfast actually has a ton of health benefits! Here, let me break it down:

  • STRAWBERRIES – Strawberries are an excellent source of vitamin C, which is important for immune health and helps protect your cells from damage caused by free radicals. It is also a good source of folate, or vitamin B9, and essential nutrient for everyone, but especially pregnant women.

  • BLUEBERRIES – Along with more vitamin C and vitamin K, blueberries are known as one of the highest antioxidant foods that you can consume. Antioxidants have been linked to a potential decreased risk of many diseases and cancers.

  • RICOTTA CHEESE – Milk ricotta cheese is a very good source of calcium, phosphorous and selenium. There is about 11.3 grams of ‘complete’ protein per 100 grams, which is loaded with the essential amino acids that our bodies need in the mornings to keep our energy levels up throughout the day. It also contains OMEGA-3 in it’s DHA/EPA form.

  • WHOLE WHEAT BREAD – I highly recommend serving this on a slice of organic whole wheat bread. Whole wheat contains good levels of fiber, b vitamins and trace amounts of key minerals. A diet rich in whole grains has been shown to potentially reduce the risk of heart disease and some forms of cancer.

  • BASIL – Another ingredient loaded with antioxidants, basil has been shown to be a powerful anti-inflammatory. But since we are using it in such a small quantity in this recipe, it is likely that you will mostly benefit from the flavor of it over its health aids.

Serving This As A Healthy Breakfast For Pregnant Women:

This is not only a great breakfast for ANYONE looking to have increased energy throughout the morning, but it is also a wonderful healthy breakfast for pregnant women! The berries and whole wheat bread are great sources of fiber.

Fiber is known to improve the symptoms of constipation, a common symptom of pregnancy.

Along with calcium and protein (both needed for your growing baby), the ricotta cheese spread provides OMEGA-3 in its DHA/EPA form. Pregnant women need at least 200 mg daily of this fatty acid to support the development of baby’s brain and nervous system.

Ingredients
  

  • 1/2 cup whole milk ricotta cheese (a little over 1 tbsp per piece of bread)
  • 1 cup strawberries
  • 1/2 cup blueberries
  • 3 large basil leaves
  • 1 tbsp honey
  • 6 pieces of organic whole wheat bread

Instructions
 

  • Start by toasting your bread to desired 'toasty-ness'. To get grill marks on your bread, heat butter or olive oil in a grill pan over medium-high heat and place bread in pan. Heat each side until golden brown with dark brown grill marks, about 3 minutes per side.
  • Spread a little over 1 tbsp of ricotta cheese evenly on each piece of bread.
  • Slice the strawberries into about 1/8 inch thick slices and place on top of the ricotta cheese. Fill in the spaces with the blueberries.
  • Drizzle each piece with a little honey. Rip or chop the basil into strips, and place over the top of the berries. Serve immediately, and enjoy! Option to top with chia seeds or flax seeds.
