What Is A Frittata?

A frittata is an Italian-style omelet that is typically made with beaten eggs mixed with various ingredients such as vegetables, meats, cheeses, and herbs. It is cooked slowly with low heat, either entirely on the stovetop or in the oven. It is usually thicker than a traditional omelet and can be served hot or at room temperature.

It’s kind of like a light and fluffy egg pie filled with deliciousness.

What’s the difference between a frittata and an omelet?

The main differences between a frittata and an omelet are in their preparation and cooking methods.

Cooking Method

  • Omelet: An omelet is cooked quickly over medium-high heat on the stovetop. The eggs are poured into a hot, greased pan, allowed to set slightly, and then filled with ingredients before being folded over.

    Frittata: A frittata is cooked more slowly, often starting on the stovetop over low to medium heat and then finished in the oven, or just fully cooked in an oven. The eggs and ingredients are mixed together before cooking, resulting in a thicker, more uniform dish.

Texture

  • Omelet: An omelet has a smooth, slightly creamy texture with the eggs forming a thin layer around the fillings.

    Frittata: A frittata has a custard-like texture since it’s lighter and the ingredients are fully incorporated into the eggs.

How They Are Served

  • Omelet: Usually served as a single serving, folded in half or rolled.

    Frittata: Typically made in a larger pan and then sliced into wedges, suitable for multiple servings.

These differences make each dish unique in its own right, with the frittata being more versatile for incorporating various ingredients and serving a crowd, while the omelet offers a quick, individualized meal.

The Ingredients

In this parmesan frittata recipe we use a variety of vegetables, followed by some fresh herbs and lots of eggs!

  • Eggs – I always recommend using pasture-raised eggs whenever you can. Chickens that are allowed to roam the pastures get to eat lots of bugs and worms, which in turn gives them more nutrients. Healthy chickens produce healthy eggs!

  • Mushrooms – Any variety of mushrooms works. I recommend chopping them pretty small so that you get tiny pieces in every bite.

  • Onion – Same as the mushrooms, any variety works, and you want to chop it up pretty small so you get to enjoy it in every bite!

  • Asparagus – I used thin asparagus stalks and cut them into medallions. You can also use small broccoli florets, zucchini, and/or red bell pepper.

  • Parmesan – Freshly grated parmesan is perfect in this recipe. Try to use the real stuff from the refrigerator section rather than the fake parmesan that does not need to be refrigerated.

  • Herbs – We use fresh herbs like thyme and parsley, but if you would rather use basil or cilantro, you definitely can!

How To Make A Frittata With Vegetables

There are actually quite a few ways that frittatas can be made, and in this mushroom frittata recipe we completely cook the eggs in the oven, rather than starting them on the stove. Here, let’s break it down. Make sure to scroll down to the recipe card for the full list of ingredients and instructions.

  1. Sautee The Veggies – Add the chopped veggies to a hot skillet with olive oil, and sautee for about 7 minutes until soft and the mushrooms are starting to brown.

  2. Season – Toss in the garlic, parsley and thyme, and saute for 30 seconds before adding 1/4 tsp salt and pepper. Remove from the heat and set aside.

  3. Whisk Eggs – Whisk the eggs in a large bowl with the milk, parmesan, and 1/4 tsp table salt. Whisk well so that the eggs and milk are well combined and the mixture is light, at least 1 minute with a hand whisk.

  4. Transfer to Pie Dish and Bake – Spray a ceramic pie dish with cooking spray. Place the sauteed veggies in the pie dish in a single layer. Pour the whisked eggs over the top. Place in the oven and bake until the sides are beginning to crisp and the center is fully set, about 30 minutes.

  5. Flip – This is optional, but I like to flip my frittata out of the pie dish onto a plate. To do this I place a plate over the top of the pie dish and carefully flip the pie dish without moving the plate. If you have a good ceramic pie dish that you sprayed with cooking spray, it should come right out. You can run a butter knife along the edges to make sure it isn’t sticking. Or you can just leave it in the pie dish! Totally up to you.

  6. Rest & Garnish – Allow it to sit for 5 minutes before serving. Garnish with fresh herbs, and enjoy!

How To Store and Reheat A Vegetable Frittata

Refrigerate within 1 hour of cooking, and store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat I recommend microwaving it in 30-second intervals, flipping between for even heating, until the desired temperature is achieved.

Tips For Success

Make sure that you use a ceramic pie dish and spray it with cooking spray. If you use a metal dish you run the risk of the frittata sticking to the sides. This is the Le Creuset Stoneware 9″ Heritage Pie Dish that I use, if you are interested!

You also really want to make sure that you don’t OVER cook the frittata. You want the center to be set, but if you overcook it it will become spongy rather than light. Still good, but a different texture than intended. You are also going to let it sit for 5 minutes after it is done, so it will continue to bake in that time.

And use whatever vegetables that you have on hand! Feel free to sub out the asparagus for broccoli, red bell pepper, zucchini, or summer squash!

Equipment

  • 1 ceramic pie dish

Ingredients
  

  • 1 tbsp extra virgin olive oil
  • 1 cup loose mushrooms, chopped into bite sized pieces
  • 3 small asparagus stalks, woody ends removed and asparagus chopped into 1/4 inch thick medallions
  • 1 small onion, peel removed. and chopped into bite sized pieces
  • 1 garlic clove, minced or pressed through a garlic presser
  • 1/2 tsp table salt, divided
  • 1/8 tsp black pepper
  • 2 tbsp fresh chopped parsley plus more for garnish
  • 1 tbsp fresh chopped thyme leaves plus more for garnish
  • 5 large eggs
  • 3/4 cup whole milk
  • 1/4 cup freshly grated parmesan cheese
  • Cookig Spray

Instructions
 

  • Preheat – Preheat the oven to 375 degrees F.
