Sweet potato is one of the healthiest and tastiest foods you can eat, and in this air fryer sweet potato cubes recipe we transform sweet potato into a delicious snack or side dish that the whole family will love. Just chop, drizzle with olive oil and air fry! Simple as that! And you can make them with frozen sweet potato cubes as well.

Why You Will Love Air Fryer Sweet Potato Cubes

This recipe surprised me. I used to believe that pre-baking sweet potatoes was necessary before air frying. However, it turns out that you don’t need to pre-cook them at all, and they finish cooking perfectly in just 16 minutes!

The sweet potato will come out with a few slightly crispy edges, and those crispier sides will develop a deep caramelized flavor that will keep you snacking on these bad boys until they are gone!

The Health Benefits of Sweet Potato

Sweet potato is one of the most inexpensive foods at the grocery store, which is strange considering how healthy they are for us!

In fact, one of the foods that is believed to contribute to the longevity of people in Okinawa Japan (a blue zone) is purple sweet potato. In the early 1900s, Okinawans got 80% of their calories from sweet potatoes. Purple or orange sweet potatoes are an easy way to pack vitamins and minerals into each meal because they are high in fiber, vitamin A, potassium, vitamin C, and folic acid.

  • Rich in Nutrients: Sweet potatoes are packed with essential nutrients, including vitamins (such as vitamin A, vitamin C, and several B vitamins), minerals (like potassium and manganese), and fiber.

  • High in Antioxidants: Sweet potatoes contain powerful antioxidants, such as beta-carotene (which gives them their orange color), anthocyanins, and other phytonutrients. These antioxidants help protect the body from oxidative stress and reduce the risk of chronic diseases.

  • Supports Eye Health: The beta-carotene in sweet potatoes is converted into vitamin A in the body, which is essential for maintaining healthy vision and supporting the immune system.

  • May Improve Blood Sugar Control: Despite their natural sweetness, sweet potatoes have a lower glycemic index compared to white potatoes. This means they are less likely to cause sharp spikes in blood sugar levels, making them a suitable choice for individuals with diabetes or those aiming to manage blood sugar.

  • Anti-inflammatory Properties: Certain compounds in sweet potatoes, such as anthocyanins and vitamin C, have anti-inflammatory effects that can help reduce inflammation in the body.

  • Heart Health Benefits: The potassium content in sweet potatoes helps regulate blood pressure and supports heart health. Additionally, the fiber and antioxidants in sweet potatoes contribute to a healthy cardiovascular system.

So why aren’t we eating sweet potatoes every day? Well, many people aren’t comfortable with cooking them, or haven’t found a delicious sweet potato recipe that they enjoy. That’s where these cubed sweet potato cubes in air fryer come into play!

How To Cook Air Fryer Sweet Potato Cubes

Cut them into cubes, drizzle with olive oil and seasonings, then air fry! Simple as that. Here, let me break it down. Make sure to scroll down to the recipe card for the full list of ingredients and instructions. Cutting the sweet potato can be a challenge for people, so take a look at my pictures to get an idea.

  1. Cube The Sweet Potato – Peel the sweet potato and cut it into 1/2-inch thick medallions. From there, cut each medallion into 1/2-inch cubes. They don’t need to be perfect, but you want them all similarly sized so they cook evenly.

  2. Toss With Oil & Seasonings – Toss the cubed sweet potato into a bowl with a healthy drizzle of extra virgin olive oil, and a sprinkle of salt, pepper, and garlic powder. You can also use some onion powder or even a little brown sugar if you like.

  3. Air Fry – Pre-heat the air fryer for 3 minutes, then toss the cubed sweet potato in air fryer in a single layer. You may need to work in batches if you have a smaller air fryer or more sweet potato. Set the air fryer to 400 degrees F and cook for 16 minutes. Shake the basket to toss well halfway through.

  4. Enjoy! – When they are done, take them out of the air fryer and sprinkle with fresh herbs like parsley. Serve as a side for dinner, or eat as a snack with a dipping sauce. You can also add more salt and pepper to taste. Enjoy!

You can store leftovers in an airtight container in the refrigerator for up to 3 days, though they are best right away! You can reheat them in the air fryer or microwave, or toss them into a skillet.

When To Serve Sweet Potato Cubes

Air fried sweet potato cubes make the perfect side dish for dinner because they are so easy to make and they taste amazing with just about anything. You can toss them into grain bowls like my Super Simple Sweet Potato Quinoa Bowls.

Kids also love them! They make a great lunch idea, and taste even better with a healthy drizzle of tahini dressing. My kids love them with a little cinnamon. You can also just snack on them throughout the day.

Can You Air Fry Frozen Sweet Potato Cubes?

You can also use a bag of frozen sweet potato cubes! Just open the bag and pour the sweet potato chunks into the air fryer basket. Set the temperature to 400 degrees F and cook for 5 minutes. At this time, they should be thawed out and you can toss them with the olive oil and spices. Return to the air fryer and cook for 10 more minutes, tossing halfway through.
