In this parmesan frittata recipe we use a variety of vegetables, followed by some fresh herbs and lots of eggs!
How To Make A Frittata With Vegetables
There are actually quite a few ways that frittatas can be made, and in this mushroom frittata recipe we completely cook the eggs in the oven, rather than starting them on the stove. Here, let’s break it down. Make sure to scroll down to the recipe card for the full list of ingredients and instructions.
Sautee The Veggies – Add the chopped veggies to a hot skillet with olive oil, and sautee for about 7 minutes until soft and the mushrooms are starting to brown.
Season – Toss in the garlic, parsley and thyme, and saute for 30 seconds before adding 1/4 tsp salt and pepper. Remove from the heat and set aside.
Whisk Eggs – Whisk the eggs in a large bowl with the milk, parmesan, and 1/4 tsp table salt. Whisk well so that the eggs and milk are well combined and the mixture is light, at least 1 minute with a hand whisk.
Transfer to Pie Dish and Bake – Spray a ceramic pie dish with cooking spray. Place the sauteed veggies in the pie dish in a single layer. Pour the whisked eggs over the top. Place in the oven and bake until the sides are beginning to crisp and the center is fully set, about 30 minutes.
Flip – This is optional, but I like to flip my frittata out of the pie dish onto a plate. To do this I place a plate over the top of the pie dish and carefully flip the pie dish without moving the plate. If you have a good ceramic pie dish that you sprayed with cooking spray, it should come right out. You can run a butter knife along the edges to make sure it isn’t sticking. Or you can just leave it in the pie dish! Totally up to you.
Rest & Garnish – Allow it to sit for 5 minutes before serving. Garnish with fresh herbs, and enjoy!
How To Store and Reheat A Vegetable Frittata
Refrigerate within 1 hour of cooking, and store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat I recommend microwaving it in 30-second intervals, flipping between for even heating, until the desired temperature is achieved.
Tips For Success
Make sure that you use a ceramic pie dish and spray it with cooking spray. If you use a metal dish you run the risk of the frittata sticking to the sides. This is the Le Creuset Stoneware 9″ Heritage Pie Dish that I use, if you are interested!
You also really want to make sure that you don’t OVER cook the frittata. You want the center to be set, but if you overcook it it will become spongy rather than light. Still good, but a different texture than intended. You are also going to let it sit for 5 minutes after it is done, so it will continue to bake in that time.
And use whatever vegetables that you have on hand! Feel free to sub out the asparagus for broccoli, red bell pepper, zucchini, or summer squash!

Vegetable Frittata Recipe

- 1 ceramic pie dish
Ingredients
- 1 tbsp extra virgin olive oil
- 1 cup loose mushrooms, chopped into bite sized pieces
- 3 small asparagus stalks, woody ends removed and asparagus chopped into 1/4 inch thick medallions
- 1 small onion, peel removed. and chopped into bite sized pieces
- 1 garlic clove, minced or pressed through a garlic presser
- 1/2 tsp table salt, divided
- 1/8 tsp black pepper
- 2 tbsp fresh chopped parsley plus more for garnish
- 1 tbsp fresh chopped thyme leaves plus more for garnish
- 5 large eggs
- 3/4 cup whole milk
- 1/4 cup freshly grated parmesan cheese
- Cookig Spray
Instructions
- Preheat – Preheat the oven to 375 degrees F.
- Sautee The Veggies – Heat a large skillet over medium-high heat. Add 1 tbsp of olive oil and the chopped veggies. Saute for about 7 minutes until soft and the mushrooms are starting to brown.
- Season – Toss in the garlic, parsley, and thyme, and saute for 30 seconds before adding 1/4 tsp salt and 1/8 tsp pepper. Remove from the heat and set aside.
- Whisk Eggs – Hand whisk the eggs in a large bowl with the milk, parmesan cheese, and 1/4 tsp table salt. Whisk well so that the eggs and milk are well combined and the mixture is light, at least 1 minute with a hand whisk.
- Transfer to Pie Dish and Bake – Spray a ceramic pie dish with cooking spray. Place the sauteed veggies in the pie dish in a single layer. Pour the whisked eggs over the top.
