What Does This Easy Bake Sweet Potato Recipe Taste Like?
If you have ever had sweet potato and BBQ sauce in a dish, you will know how harmonious they are together. Instead of overwhelming you with their sweetness, they truly compliment each other so well.
Mexican spices are mixed into the canned beans and corn, and juicy rotisserie chicken is shredded over the top. You get notes of cumin and garlic with each sweet and smokey bite, and occasional spicy twangs from the pepper jack cheese.

How Do You Make This BBQ Sweet Potato Casserole Recipe?
If you are wondering what to eat with rotisserie chicken, this is the dinner for you! Like I mentioned, it is SUPER easy to throw together, making it the perfect cheesy chicken casserole for your family!
- Start by peeling and chopping the sweet potatoes into 1/2 inch cubes, then place them in a casserole dish. They cook quicker at this size.
- Mix together the BBQ sauce and milk, and pour over the sweet potatoes. Mix well to coat every piece.
- Place the rinsed black beans and corn into a bowl, and toss them with the cumin, garlic powder and salt. Pour them evenly over the sweet potatoes. Do not mix, as we want the sweet potatoes to stay sitting in the bbq sauce mixture on the bottom.
- Add your shredded rotisserie chicken to the top
- Bake for 35 minutes. Sprinkle with a generous amount of pepper jack cheese, and place back in the oven until the cheese is melted, about 6 minutes. Sprinkle with green onion and serve!
- Option to serve with tortilla chips!

Pepper Jack Cheese | You can really use ANY cheese that you have on hand. Cheddar, Monterey Jack, Gouda, Provolone, Swiss or even Parmesan all work. |
Black Beans | Any canned bean will work here. Try kidney beans, white beans, cannelloni, navy beans or pinto beans. |
Milk | If you are dairy free, or you have a different type of milk on hand, use it! Coconut milk, almond milk and hemp milk all work fine. |
Sweet Potato Casserole Toppings | I served mine with chopped green onions and avocado. Try chopped cilantro or parsley, fresh tomatoes, or diced red onion. |
Rotisserie Chicken | I used rotisserie chicken to save me the time and effort of cooking chicken breasts ahead of time. But it is totally fine to use baked chicken breast or thigh meat if you have it on hand! |
Easy Bake BBQ Sweet Potato Casserole
Ingredients
- 2 medium sweet potatoes, peeled
- 1/2 cup BBQ sauce of choice
- 1/2 cup milk (any milk you have is fine)
- 1 cup shredded rotisserie chicken
- 1 15oz can of black beans
- 1 15oz can of corn
- 1 tbsp ground cumin
- 1/2 tbsp garlic powder
- 1/4 tsp table salt
- 1 cup shredded pepper jack cheese
Optional Toppings
- sliced green onion
- avocado
- parsley or cilantro
- red onion
- Scoop with tortilla chips
Instructions
- Pre-Heat the oven to 400 degrees F
- Chop the peeled sweet potatoes into 1/2 inch cubes, then place them in a large casserole dish. They cook quicker at this size.
- Mix together the BBQ sauce and milk, and pour over the sweet potatoes. Mix well to coat every piece.
- Rinse the canned black beans and corn, and place them in a bowl. Toss them with the cumin, garlic powder and salt. Pour them evenly over the sweet potatoes. Do not mix, as we want the sweet potatoes to stay sitting in the bbq sauce mixture on the bottom.
- Add your shredded rotisserie chicken to the top. Bake for 35 minutes.
- Sprinkle evenly with the shredded pepper jack cheese, and place the casserole back in the oven until the cheese is melted, about 6 minutes. Sprinkle with green onion, avocado or parsley/cilantro and serve! Option to serve with tortilla chips!
