Why I Love Sheet Pan Chicken And Veggies So Much:
Sheet pan dinners are my absolute go-to when I’ve had a busy day. Just toss a bunch of vegetables and chicken on a pan and let it all cook together! It usually takes me about 10 minutes to prepare, cooks in 30 minutes, and I’ve got a healthy and delicious dinner on the table within the hour!
The simplicity of this easy recipe is off the charts. It also makes a wonderful leftover hummus recipe, if you have any lying around (I always have 2 or 3 hummus containers shoved in a drawer in the refrigerator for a last-minute appetizer for guests!)
Plus I always make extra, which means I made dinner AND lunch for the next day with only 10 minutes of preparation! I store the leftovers in a glass container with an air-tight lid. Tupperwares also work great!

How To Make Hummus Chicken And Veggies:
It’s so easy, I feel weird even calling this hummus chicken bake a recipe!

Prepare the baking sheet or large baking dish by placing a piece of parchment paper over the top.
In a large bowl, mix together the hummus, minced or pressed garlic, and olive oil. Stir well.
Cut the skinless chicken breasts in half horizontally (so they are thinner), and place them on the baking sheet. Coat the top of each breast with an even layer of the hummus mixture, a little more than 2 tbsp per piece of chicken.
Spread the sliced and chopped vegetables evenly throughout the baking sheet and drizzle them with olive oil. Salt and black pepper everything on the baking sheet.
Bake at 400 degrees F for 35-40 minutes, until the chicken is cooked to 165 degrees F at its thickest part.
Serve the hummus-crusted chicken with the baked vegetables. You have the option to add a side of rice, quinoa or couscous to this dish as well!
Hummus Chicken Ingredients & Substitutions
Honestly, ANYTHING that will cook through in 25-30 minutes works for this sheet pan chicken dinner. I recommend using local seasonal produce for sustainability reasons! And I recommend using as many vegetables as you would like to use! I only had zucchini and red onion on hand, but here are a few more suggestions:

Is this a hummus crusted chicken recipe? | So here’s my thing with calling it ‘crusted’. Technically this is how you make hummus crusted chicken…HOWEVER…I do not consider the hummus to make a ‘crust’ on the chicken. To me, crust is crispy. I have never had the luck of being able to get the hummus crispy on the chicken when baking it. So I consider this more of a ‘hummus chicken’ recipe, and you can decide if you consider it crusted or not! |
Is it okay to use store bought hummus? | Absolutely! That is exactly what I use! It’s just so much easier when you’re in a rush to get dinner on the table. Plus I always have hummus bowls in the corner of the fridge, just waiting to be used. But if you are feeling ambitious and want to make the hummus from scratch, more power to you! But yes, store bought hummus is TOTALLY FINE for this recipe. |
Does the flavor of the hummus I use change anything? | The flavor will change the flavor of the chicken, but you can use whatever flavor of hummus that you like! I used lemon hummus for this recipe, but you can also use sun-dried tomato hummus, everything bagel seasoned hummus (yes, it’s a thing!), greek inspired hummus, spicy hummus or really ANY kind of hummus, even your own hummus! I encourage adding garlic to whatever flavor your choose for the added health benefits that it brings to the dish, such as increasing antioxidant levels in the body to help fight free radicals. |

Sheet Pan Hummus Chicken and Veggies
Equipment
- large flat baking sheet
Ingredients
- 2 large chicken breasts, cut in half horizontally to make 4 cutlets (or 4 small chicken breasts)
- 1 cup store bought or premade hummus what ever flavor you like
- 2 tbsp olive oil or avocado oil, plus a few tbsp more for drizzling
- 2 large garlic cloves, peeled and minced or pressed through garlic presser
- 2 zucchinis, stems removed
- 1 red onion
- salt/pepper as needed
Instructions
- Pre-heat the oven to 400 degrees F. Prepare the baking sheet by placing a piece of parchment paper over the top.
- In a large bowl, mix together the hummus, minced or pressed garlic and 2 tbsp olive oil. Stir well.
- Cut the chicken breasts in half horizontally (so they are thinner), and place them on the baking sheet. Coat the top of each breast evenly with the hummus mixture, a little more than 2 tbsp per piece of chicken.
- Slice the zucchini into 1/4 inch thick medallions, and chop the red onion into wedges. Spread the vegetables evenly throughout the baking sheet and drizzle them with a few tbsp of olive oil. Salt and pepper everything on the baking sheet.
- Bake at 400 degrees F for 25-30 minutes, until the chicken is cooked to 165 degrees F at its thickest part.
- Serve the hummus crusted chicken with the baked vegetables. You have the option to add a side of rice, quinoa or couscous to this dish as well!
