If you are looking for a healthy breakfast that is high in antioxidants and easy to make, look no further than matcha overnight oats! In this recipe we pair the flavor of matcha with bright and citrusy lemon and sweet honey. It comes together in just minutes, and it can be made ahead of time and stored in the fridge for up to four days!

What Is Matcha?

Matcha is a fine powder made from dried green tea leaves. By itself, it is fairly bitter, with earthy grass notes. It can be added to various things, but traditionally in Japan, it is dissolved in hot water.

It is a little expensive, but a small amount goes a long way! You can find matcha at most specialty food stores and places like Whole Foods and Fresh Market. I ordered mine from Amazon – Jade Leaf Matcha Organic Culinary Grade Matcha Green Tea Powder.

The Health Benefits Of Matcha

The process of making matcha involves grinding the entire tea leaf into a fine powder. Farmers shade the plants used for matcha, and this lack of direct sunlight increases chlorophyll production and boosts the amino acid content.

When you drink matcha, you actually end up consuming the entire leaf, so for this reason, matcha may be more beneficial to your health than regular green tea which is served in a tea bag and soaked in water.

This makes for a wonderful Mediterranean diet breakfast recipe because it is so healthy and quick to make!

Matcha is studied for its potential to:

  • Fight disease – Matcha is an antioxidant powerhouse. It is rich in catechins, which are powerful antioxidants that help fight free radicals in the body.

  • Enhance brain function – A recent study done of 23 people showed that those who consumed matcha showed improvements in attention, reaction time, and memory compared with those consuming the placebo.

  • Prevent cancer – More studies are required on this, but matcha contains epigallocatechin-3-gallate (EGCG), which is a type of catechin that may have powerful anti-cancer properties. Study findings showed that matcha had the potential to affect proliferation, viability, antioxidant response, and cell cycle regulation of breast cancer cells, but this needs a lot more research to be verified.

Expert Tips

  • Matcha has a shelf life – Unfortunately, matcha doesn’t last forever. Storing it in the fridge may help extend that life, but you typically want to use your matcha within 2 months of opening it.

  • Don’t over zest the lemon – Matcha is already bitter, so if you accidentally over zest or zest too hard, you will have more bitter flavor. Make sure you are only zesting the yellow part of the lemon, not the white pith below.

  • Add more liquid according to your preference – This recipe will yield a thicker consistency, so if you enjoy a thinner overnight oat consistency, just add more liquid when you are ready to serve!

  • Sweeten to taste – Since every matcha will vary in flavor, you may want to counteract the grassy umami flavor of matcha with more sweetness. Add honey, maple syrup, or agave nectar to taste.

How To Make Matcha Overnight Oats Ahead Of Time

This make-ahead breakfast recipe is super easy to meal prep!

Just mix all of the ingredients together, divide into jars or cups, and cover with a lid or plastic wrap. So how long do overnight oats last? These matcha lemon overnight oats can be stored in the refrigerator for up to 4 days.

  • Granola

  • Chopped nuts like almonds, walnuts, pine nuts

  • Fresh berries

  • Flax seeds

  • Spices like cinnamon, pumpkin pie spice, nutmeg

  • A drizzle of peanut butter

Ingredients
  

  • 1 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tsp flaxseed meal optional
  • 1 1/2 tsp matcha powder
  • 1 1/2 tsp honey, maple syrup or agave nectar add more to taste if you like
  • 1 tsp vanilla extract
  • 2 tbsp fresh squeezed lemon juice
  • 1 tsp lemon zest
  • 1/4 cup plain greek yogurt, or vegan alternative
  • 1 cup milk of choice

Instructions
 

  • Add all of the ingredients to a large jar or bowl and mix well. Transfer mixture to mason jars or individual serving tupperwares, and cover with a lid or plastic wrap.
  • Refrigerate for at least 2 hours and up to four days. Serve with granola, fresh fruit, nuts or any other toppings. Feel free to add more sugar if you desire!
