How creepy are these brie and brown sugar baked stuffed apple eyeballs?! Baking the apple eyeballs allows the skin to shrivel for an eerie shrunken eyeball affect that will have everyone quivering. But just because these Halloween apples look grotesque, doesn’t mean they have to taste grotesque! Since the apples are stuffed with brie cheese, cinnamon and brown sugar, they are quite delightful! Make these Halloween treats and watch your kids cackle with morbid pleasure!

How to make baked stuffed apple eyeballs:
This is actually a fairly easy recipe! Once your apples are cored, all you have to do is pop a piece of brie cheese inside and fill it with your brown sugar/cinnamon/pumpkin seed mixture! Then, once they are baked through and cooled down (you don’t want the frosting to melt), use a few different colored frosting tubes to draw on the eyeballs! Make them as menacing as you like!
How to core the Halloween apples:
I used an old school apple corer, the kind that you push in and then spin in a circle to get the core out. I know there are fancier ones out now that work easier, so if you have one of those, USE IT! Make sure to not push the corer through the bottom of the apple, or all of the brown sugar will melt out and cause a huge mess. All in all, the process of coring 9 apples took me about 15 minutes, so it wasn’t too tedious.
Once I got the core out, I used the back of a spoon to make the pocket a bit wider. I was careful not to push too hard and break the apple as I scraped the back of the spoon along the insides of the apple to hollow it out more.

Ingredients & substitutions
This is a 7 ingredient dessert! All you need are small apples (as many as you would like to make, just adjust the other ingredients accordingly), brie, brown sugar, butter, frosting and pumpkin seeds (raw pepitas)! The pumpkin seeds are TOTALLY optional. You can omit them completely or substitute them with chopped almonds or walnuts. As far as the apples go, use any kind you like. Honey crisp, red delicious, fuji, green apples; they all work! Just try to get ones that are smaller in size.
Can I make this apple recipe without making hideous creepy eyeballs?!
YES! This recipe tastes exactly the same whether you draw spooky eyes on the apples or not! Baked brie with brown sugar is a fall holiday favorite, why not put it inside of an apple?!

Ghoulish Tricks for Treats:
- After the apples are done baking, you will notice that the brown sugar and brie has melted, leaving a gap between the filling and the opening of the apple. Just scoop in some more brown sugar/cinnamon mixture while it is still hot and it will melt to fill the gap!
- Before drawing on the frosting eyeballs, make sure to let the apples cool long enough to prevent the frosting from melting. I let my apples sit outside of the oven for about 30 minutes before I added the frosting. These apples can be served piping hot with no frosting, or warm with the frosting.

When to serve baked stuffed apple eyeballs
Halloween, of course! These baked stuffed apple eyeballs are PERFECT for a school Halloween snack or treat! Just be aware that the recipe does call for nuts, so to make this a nutless and seedless treat, omit the pepitas! These can also be served as a great Halloween party appetizer or dessert idea! This holiday scary DIY is kid friendly, just make sure the adult cores the apples!

Equipment
- apple corer
Ingredients
- 9 small apples, any kind (you might want to purchase a couple extra just in case you accidentally poke a hole while coring)
- 1/2 cup brown sugar
- 1 tbsp cinnamon
- about 1/4 of a wheel of brie cheese, cut into spears (they need to fit inside the apple hole)
- 1/4 cup pepitas (pumpkin seeds) optional, can also use walnuts/almonds
- slivers of butter to go over each apple (about 2 tbsp total)
- 1/2 cup boiling water
- White, black and red frosting tubes to draw the eyeballs
