Greek Yogurt Chocolate Mousse

This easy-to-make Greek yogurt chocolate mousse is both satisfying and guilt-free! With 13 grams of protein per serving, plus gut-healthy probiotics, it's a nutritious and filling dessert option.

Ingredients
  

  • 1 cup whole fat greek yogurt Cabot works great
  • 1 tbsp honey
  • 2 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1/4 cup dark chocolate chips or wafers (see notes * 80% and up is best for antioxidants!)
  • chopped chocolate and mint leaves for garnish

Instructions
 

  • Place the Greek yogurt in a mixing bowl. Add the honey, cocoa powder, vanilla, and salt.
  • To melt the chocolate, place it in a microwave-safe bowl and microwave for 30 seconds. Mix well, and continue to microwave in 30-second intervals until melted. If it seems clumpy, try adding 1/8 tsp olive oil to the chocolate.
  • Pour the melted chocolate over the yogurt. Whisk using a hand mixer for 60 seconds, until well incorporated.
  • Transfer the yogurt to a serving bowl and cover with plastic wrap. Refrigerate for at least two hours. Garnish with chopped chocolate and mint leaves, and enjoy!

Notes

* You can also use a dark chocolate bar chopped into tiny pieces
You can store leftovers in an airtight container in the refrigerator for up to 3 days.
