3mediumgarlic cloves, minced or pressed through garlic press
1tbspfresh thyme, chopped
salt/pepper as needed
Instructions
Heat a large skillet over medium-high heat. Add the bacon slices and cook until crispy. Transfer to a plate.
Toss in the whole mushrooms. Cook for about 15 minutes over medium-high heat, stirring every 5 minutes to sear on all sides. You want them starting to brown before stirring.
Add the arugula, garlic, thyme and lemon juice and stir well. Cook for an additional 2 minutes.
Salt and pepper as needed. Garnish with crumbled bacon bits and more thyme. Enjoy!
