Strawberry Blueberry Toast With Ricotta
This fresh and bright berry ricotta toast recipe is an easy and healthy way to start your day!
- 1/2 cup whole milk ricotta cheese (a little over 1 tbsp per piece of bread)
- 1 cup strawberries
- 1/2 cup blueberries
- 3 large basil leaves
- 1 tbsp honey
- 6 pieces of organic whole wheat bread
Start by toasting your bread to desired 'toasty-ness'. To get grill marks on your bread, heat butter in a grill pan over medium-high heat and place bread in pan. Heat each side until golden brown with dark brown grill marks, about 4 minutes per side.
Spread a little over 1 tbsp of ricotta cheese evenly on each piece of bread.
Slice the strawberries into about 1/8 inch thick slices and place on top of the ricotta cheese. Fill in the spaces with the blueberries.
Drizzle each piece with a little honey. Rip or chop the basil into strips, and place over the top of the berries. Serve immediately, and enjoy! Option to top with chia seeds or flax seeds.
