3cupsthinly sliced yellow onions (this is usually about 6-8 onions)
6cupslow sodium beef broth
2tbspbrandy, sherry or cognac
12slices of french or italian bread(the staler, the better!)
Slices of Gruyere, Jarlsberg or Swiss cheese, enough to top each piece of bread
Instructions
Heat a large dutch oven or pot over medium-high heat. Add the bacon, and cook until crispy, about 3 minutes per side. Remove from the pot whe done cooking, reserving the grease in in the pot.
While the bacon is cooking, peen and slice the onions. When the bacon is done cooking and removed from the pot, add the onions to the bacon grease and stir to coat. Cook until the onions become to appear translucent, about 5-6 minutes, stirring occasionally.
Pour in the 2 tbsp of brandy and stir. Now pour in the beef broth. Bring the soup to a low simmer and continue to simmer on low for 10 minutes.
Meanwhile, preheat the broiler. Arrange the french bread slices on a baking sheet, and top each piece with a slice of cheese. Place the sheet under the broiler (3-4 inches away from the heat), and cook for 1-2 minutes, until the cheese has fully melted. Make sure to keep an eye on it to prevent burning.
Ladle the soup into bowls, and top each bowl with 3 slices of cheesy bread. Place a piece of bacon on each slice. Enjoy!
