1 1/2tspsmoked paprika
1tsptable salt

8whole wheat tortillasCan also use flour tortillas
Optional Toppings
1avocado, sliced
1cupsour cream or plain Greek yogurt
1/4cupminced parsley or cilantro
1/2cupshredded cheese
Instructions
Pour 1 can of diced tomatoes into the bottom of a slow cooker. Top with half of the sliced bell peppers and onion. Place the chicken thighs directly on top.
Mix together all of the spices and table salt (you can also use premade taco seasoning). Evely sprinkle the mixture over the slow cooker ingredients, making sure to coat the top of the chicken.
Evenly spoon over half of the second can of diced tomatoes (save the other half for another recipe). Cover and cook on low for 6-8 hours, or on high for 4-6 hours.
1 hour before the recipe is scheduled to be done cooking, add in the rest of the sliced bell peppers and onion and continue cooking for 1-1.5 hours.
When chicken is done cooking (should register 165 degrees F), carefully remove it from the liquid and place it on a cutting board. Carefully slice it into strips. You can also shred it. (See notes about liquid)
Warm the tortillas in the microwave for 20 seconds, or in the oven, then top with the sliced chicken and cooked bell peppers and onion. Squeeze over some lime juice, and top with toppings of choice.
Notes
Liquid in crockpot:You are going to have a lot of liquid left over in the crock pot from the tomatoes and the chicken. Don't throw it away! I saved mine and actually used it the next day to cook stewing meat in. I added beef to the crock pot with the leftover tomato liquid and beef broth, and then added barley and veggies. It was super flavorful and delicious!
