Chocolate Peanut Butter Apple Studel Bites

These crispy on the outside gooey on the inside breakfast bites are craving approved! They crunch on your teeth and melt in your mouth!

Ingredients
  

  • 1 pack wonton wrappers (this recipe yields about 20)
  • 2 granny smith apples, peeled and chopped small (pretty much any apple will work, don't be discouraged if you don't have granny smith!)
  • 3 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1/8 tsp salt
  • 1 tbsp lemon juice
  • 2 tbsp unsalted butter, divided
  • t tbsp peanut butter (or almond butter or any other nut butter)
  • 1/2 cup chocolate chips

Instructions
 

  • Peel and chop the apples, almost until they are minced (you want them to fit in the tiny wonton wrappers).
  • Combine brown sugar, salt and cinnamon in a bowl.
  • Heat 1 tbsp butter oven medium high heat. Toss your chopped apples into the skillet and then your sugar mixture. Stir to combine and cook for about 5 minutes, stirring frequently. Around 5 minutes, add your tbsp of peanut butter, stir to coat, and remove from heat.
  • Place one wonton wrapper on a work surface with one corner facing you. Moisten each edge with water (I just dip my finger in water and rub the edges)
  • Scoop about a tsp of filling into your wrapper. Be careful not to overfill or your wrapper will break. Place 3-4 chocolate chips on the filling. Fold the corner closest to you up to the top corner and press the edges together. This should make a triangle. Take a fork and lightly press the edges together.
  • Place this wonton to the side and continue until there is no filling left.
  • Heat 1/4 of a tbsp of butter in a new skillet. Once hot, place your wontons in (you will likely have to do 2-3 batches). Cook until golden, about 1-2 minutes, then flip and repeat. Once golden on both sides, remove and repeat with a new batch, making sure to add a sliver of butter before each new batch.
  • Serve on a platter and enjoy!

Notes

Tips: 
  •  To seal the edges of the wonton, i used a fork and pressed it down on both sides, but if you are feeling ambitious you can try to form a triangle ingot or envelop. 
  • I only use 3-4 chocolate chips per bite because you don't want chocolate to be the main flavor in this bite.  3-4 chips was the perfect amount of chocolate flavor without overpowering the apple, cinnamon and peanut butter.
  • To make this slightly healthier, substitute coconut oil for the butter and coconut sugar for the brown sugar!
