Melting Snowman Cakes

These individual winter snowman cakes are chocolatey, peanut buttery and so darn cute!

Ingredients
  

  • 1 cup whole wheat flour (or all purpose)
  • 8 tbsp cocoa powder
  • 1/2 tsp baking soda
  • 1/2 cup chopped almonds (optional)
  • 2/3 cup granulated sugar
  • 1 cup tap water
  • 4 tbsp olive oil
  • 1 tsp almond extract (or vanilla)
  • 1/2 tbsp white vinegar
  • 1/2 cup chocolate chips or chocolate from a chocolate bar, chopped into small pieces
  • about 1/4 cup of peanut butter
  • 1/8 tsp salt

The Melted Marshmallow Snowman

  • 1 marshmallow per cake
  • Black icing (the tube kind works great)
  • 1 tbsp water
  • 3 extra marshmallows for the 'melted snow'
  • 3 tbsp confectioners sugar
  • 1 baby carrot, cut into small slivers for the noses

Instructions
 

  • Preheat the oven to 400 degrees F and spray a large muffin tin with cooking spray or grease with grease.
  • Pour flour, salt, cocoa powder and baking soda in a sieve over a bowl, and shake until all of the ingredients have gone through the sieve into the bowl.
  • In a separate bowl, combine water and granulated sugar. Whisk until most of the sugar has dissolved in the water (this may take a few minutes). Now add the olive oil, almond extract and vinegar. Stir to combine (oil and vinegar will stay separated).
  • Pour the wet ingredients into the dry ingredients bowl and whisk until there are no clumps, and a smooth batter forms.
  • Now add the chopped almonds and chocolate chips. Stir.
  • Pour the mixture into the muffin tins, leaving about 1 inch at the top of the tin for the cake to expand. Scoop about 1/2 a tsp of peanut butter into each cake, and stir it around with a tooth pick or the back of a spoon.
  • Place the muffin tin in the oven and bake for 30-35 minutes. Once done, remove from the oven and let cool for 2-3 minutes on the counter. When done, the cakes should easily pop out of the muffin tin. If they are sticking, they may need to be baked for a little longer. You can also use a flat butter knife to go around the edges to make this easier.

To Make The Melting Snowman:

  • While the cakes are baking in the oven, take a marshmallow and draw a face on it using a tooth pick and black icing. Poke a hole where the nose should be, and insert a sliver of carrot. Do this for all marshmallows needed.
  • To make the 'melting snow', place 3 plain marshmallows in a small microwave safe bowl with water. Microwave for about 30-45 seconds, until the marshmallows melt. (make sure to watch them so they do not get all over your microwave! They will expand)
  • Remove from the microwave and stir with a fork until combined. Add in confectioners sugar and stir again.
  • Once cakes are done and popped out of the muffin tin, you can assemble the melting snowman. Spoon a spoonful of 'melted snow' onto the middle of the cake and let it run down the sides. Now place a snowman head on top, and you are ready to serve!

Notes

Tips:
  • You can store these delicious chocolate peanut butter snowman cakes on the counter overnight (in a Tupperware, Ziploc bag or wrapped in plastic wrap), OR you can store them in the fridge for a few days in the same storage.
