Soysage

Tofu is seasoned with a variety of spices and baked in the oven to yield a vegan ground sausage that is great as a healthy meatless alternative!

Ingredients
  

  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1 tsp garlic
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/8 tsp ground cloves
  • 1/4 tsp cinnamon
  • 1/8 tsp salt
  • 1/4 tsp celery seed
  • 2 1/2 tbsp coconut aminos (or low sodium soy sauce)
  • 1 1/2 tbsp tbsp apple cider vinegar
  • 1 tsp liquid smoke (most are vegan, but double check if you are vegan)
  • 4 tbsp flour (the coarser the better, I used almond meal flour)
  • 1 14oz block of organic extra firm tofu

Instructions
 

  • Preheat the oven to 350 degrees.
  • Place the block of tofu on a few folded paper towels. Place a few more folded paper towels over the top of the tofu, and put something heavy on top (I used a book or a pot filled with water). Let the excess moisture in the tofu get absorbed by the paper towels for about 20 minutes. You may need to replace the paper towels in that time.
  • While the tofu is draining, mix all of the spices together in a bowl. Add the coconut aminos (or low sodium soy sauce), liquid smoke, apple cider vinegar and flour. Whisk until fully combined.
  • Crumble the tofu over the spice mixture and stir until coated. On a parchment lined baking sheet, spread the tofu mixture out evenly.
  • Bake in the oven for 15 minutes, take out and stir. Bake another 10-15 minutes until desired consistency. Sprinkle over tacos, in burritos, with pasta dishes! The possibilities are endless. Enjoy!
